Whole 30 Weekly Wrap 4

First of all, did you notice there is no weekly wrap 3? Yep....sorry about that. Life got a little crazy around here with swim lessons and then gutting a bathroom (you'll see more about that later).

So it's easier for me to do week 4 now because it's still fresh in my mind. I mean, I have to think back a pretty long way to remember what I had in week 3. I'm working on it and you will see it soon, I'm sure.

Monday was a typical Monday around here. We woke up later than we expected to, were a bit sluggish, but still managed to be okay. Breakfast was cereal for my son (his choice) and some fruit for me. In fact, breakfast this week was pretty much all cereal or fruit. We stick to easy around here, especially when we get lazy. Lunch for me was a salad because I finally found some awesome dressing. Seriously, I have been trying dressings (homemade, store bought) and just haven't found the dressing to make me eat as many salads as I would like. Insert this yummy Ranch Dressing! Seriously, this stuff is amazing and may be my new go-to ranch even when I'm not on the Whole30! Dinner was this Zoodle Dish. It was good, but just wasn't what I was looking for. I think the zoodles were just not done all the way and my zoodler is not the best at making noodles. It was a super quick meal and I feel like it would be a nice summer lunch; I just needed more for dinner.

I'm gonna skip over breakfast and lunch for the majority of the week since it was all the same (fruit for breakfast, salad for lunch) because I'm too lazy to type it over and over again.

Tuesday, we had this amazing Shrimp Fajita dish! I had mine over salad and the boys loved theirs in tortillas with lots of cheese and avocado. My favorite part of this meal was how quick it was to cook. I don't mind being in the kitchen, but my energy was running pretty low so a quick meal was awesome! And it made pretty good leftovers too!

My husband was off work on Wednesday so I decided it was the perfect time to cook up a meal that takes a little bit longer than usual. This is one of my favorite recipes so I knew it was going to be perfect and hit the spot. Seriously, these Greek Chicken Kebabs are the bomb! And you can't have kebabs without tzatziki sauce so I searched for a Whole30 compliant recipe for one. I found one and it wasn't terrible, but I still love mine made with Greek Yogurt more. If you want to try the paleo tzatziki sauce, you can find the recipe here.

It was back to just me and the kids on Thursday so I was glad to have a crockpot meal on the menu. We had this Creamy Southwest Chicken and some cauliflower rice. Let's talk about cauliflower rice for a second. I've made it with the food processor and I've heated it up in the microwave. I liked my fresh one better (probably because of all the coconut oil), but the frozen one you just heat up in the microwave was so easy and went great with this meal. Okay, back to the chicken. This recipe will make your house smell AMAZING the entire time it is cooking! Seriously, just cook it for the smell! But really it tasted amazing too and we were actually sad that we didn't have leftovers.

Friday was a little bit of a crazy day, but we made it work. Normal breakfast and lunch for the week and by the time dinner rolled around, I just didn't want to cook. Well, that wasn't going to work since I had pulled meat out of the freezer to cook. So, Meatballs it was. These weren't terrible, but probably aren't something I will make again. See, we have an aunt who makes amazing meatballs and these just don't even come close to comparing. They are pretty good reheated (as long as you store them in the sauce so they don't dry out) so they would make a great meal prep recipe.

Saturday, I woke up and had my fruit while the husband and son had their lovely sugar filled bowls of cereal. I'm not a huge cereal person anyway, but lately the cereal looks so yummy and I know it is because I haven't been eating much sugar. Lunch was easy as I made the family some grilled cheese sandwiches and I had a yummy salad (yay for finally finding some great dairy free ranch dressing) before heading off to a fun author visit (I'll make a post about that soon too) at the library. Dinner was not so good. Pizza. We spent most of the afternoon outside so by the time dinner rolled around, no one knew what they wanted. I ate less pizza than I would have a month ago so I'm calling that a win.

Sunday was a pretty off day for  me. I didn't wind up eating breakfast in the morning because I was busy catching up on dishes, getting some stuff done around the house and just not focusing on eating. My stomach was giving me issues too because of the pizza the night before. I had a LaraBar while I was making the meal list for the LAST week of Whole 30 (woohoo!) and that kept me from being too hungry when I went to the grocery store. My husband has apparently been craving grilled food so dinner we had Bratwursts on the grill and I made Macaroni and Cheese. Yes, I had some mac and cheese, but I had plain Bratwurst so it kind of evened it out (if only in my mind).

And this brings me to a huge confession: I'm not really doing the Whole30 diet anymore. I was actually seeing less results eating on the Whole30 diet than I was seeing when I wasn't eating as clean as I should be. I know why this is, but I also know why I started the Whole30 and I knew that to get the results I wanted, I needed to make a few changes. So I've had some bread, sugar, soda, dairy, etc along the way, but I'm still happy with how clean my diet has been over the last few weeks.

Call me a failure if you want, but I see this as success. I've narrowed down a few foods that don't agree with me by cutting them out for just a couple weeks and I've tried a few new recipes. For me that is a huge win!

For those of you that were rooting for me to make it the whole 30 days, sorry. It just wasn't in the cards for right now. With two kids (one still breastfeeding) and the workouts that I have been doing, I had to listen to my body and cut it a little slack on the restrictions.

On to the last week of "whole30" for me and I can't wait to share some yummy recipes with you.

In Debt, One Size Does Not Fit All

We've all heard the saying that some things are just not "one size fits all." Lately, I have come to realize that debt is one of those things. I have been wanting to blog about debt and debt repayment for a while, but I really had to get myself into the mindset that I am going to tackle our debt once and for all before I could do that. But that doesn't mean that I can't give you a couple pieces of advice while I am in my own debt repayment journey, right? Yep, I just felt some eye rolls for that question; it's okay. Here are a couple things that I have realized along our debt journey: 1) We don't all handle money the same way. There are multiple financial advisers and programs out there that advocate only using cash. If you are like me, cash is not a good thing. I know that these programs advocated splitting the cash up into envelopes and only using what is there, but I prefer a more fluid budget. Cash is just a terrible idea for me because when I...

One Thing We Need To Stop

Two posts in one day? Yep, you are super lucky. This one is getting typed up super fast because of something I keep seeing all over social media: Belly Shaming. Every. Single. Day. I see posts in a group I am in where moms are asking how far along they look just based on their bellies. Guess what? No two people will look exactly a like while they are pregnant. My 21 week belly might be equal to your 9 week or 39 week belly. And guess what? That's quite alright! I wish I could say that it only happens in mom's groups or even on social media for that matter. Sadly, that's not the case. I have heard so many stories of women being asked how far along they are. The worst part? Sometimes they aren't even pregnant. And that is no one's business! Seriously, if it isn't your belly, you probably don't have a reason to comment on it's size. We don't just walk up to someone in the store and comment about how big their ears or noses are so why is it okay...

The Dreaded F Word

Wait, wait, wait. Not that word. Stop thinking bad things. I'm talking about Fingerlings. Or you can even change that letter to H for Hatchimals. Or any letter for any of the "big" toys this Holiday season. Why am I hating on them so much? Do I think they are stupid toys? No. I think that some children will absolutely love these toys and play with them daily. I also think that there are children that will play with them for 5 minutes and then never want to touch them again. I don't hate the toy themselves; I hate the craze that has come up because of them. Yes, I understand that they are popular because some children already have them and show them off either in person or on YouTube videos. I also understand that all the big stores have made a huge deal about these little toys as well, which only drives up the interest of young children (and even some adults). I especially hate that there are people out there clearing the shelves and selling the toys fo...
